Healthy Living Update: Week 2!

I had an excellent time at boot camp with The Body Firm Atlanta this past week, but kind of lost it over the weekend.  Here’s my fitness tracking for the week:

Monday:
-2.5 mile brisk walk (bits of jogging along the way)

Tuesday:
-2 mile brisk walk
-Boot camp: Arms, 1 mile brisk walk (jogged 1/8 mile for 1st time)

Wednesday:
-Boot camp: Abs, 1.33 miles (4 laps) jogged all but 1/4 of first lap

Thursday:
-Boot camp: Legs w/ some jogging, about 1 mile total jogging

Friday:
-Took the day off

Saturday:
-Ate half a pizza, thought about working out, drank beer instead.

Sunday:
-Ate chips and dip for breakfast, and a big burger and fries for lunch.  Tried to jog while dinner was in the oven, kids started arguing, had to come back home.  Ended up upset, drank more beer.

Um, yeah.  I used to be an emotional eater, and now I am an emotional drinker.  It’s something I battle with, but usually I manage just fine.  Not this weekend.  Way to much greasy food and alcohol, and I ended up feeling crappy all weekend.  Here’s the numbers for this week:

 

So my weight went back up by 2.8 pounds (sad face), but it’s still down 2.6 overall, which is okay with me for only 2 weeks of exercising.  I’m pretty sure it was the half pizza, greasy burger, bag of fries, and 12 pack of beer over the weekend that did me in.  I did see some loss in my chest, upper arm, waist and thigh areas though, so I am still very pumped about last week overall.

Total pounds lost in 2 weeks: 2.6
Total inches down this week: 2″
Total inches down overall: 3″

Even with my errant behavior this weekend, I still had a great week.  I lost some inches, was able to jog a full 1/4 miles without stopping (multiple times) and feel better physically than I have in years.  I did see some improvement in my breathing this week as well, although I feel like I’m breathing so loud everyone in class can hear me!  Today we have assessments, so I’ll have some hard numbers I can use to compare my progress to over the next few months.

I was pretty upset with myself last night for being such a slacker over the past three days, my kids were acting nuts, and I just felt blah from all the unhealthy food I ate.  I vented on Facebook to some friends, and was encouraged to hear everyone’s positive responses.  Just because I go to the extreme one weekend, doesn’t mean that I failed.  So I put myself to bed determined to have a better week this go around.  Got up this morning and started the day off with a delicious egg and veggie wrap.  And I even cheated and cooked it in the microwave so I wouldn’t have to get any pans dirty, lol.  (I hate washing egg off pans!)  Check out the simple recipe below:

 

Ingredients:
1 egg
2 egg whites
1/8 cup diced sweet peppers
1/4 cup spinach (I like to chop mine up a little)
1/2 tsp olive oil
1/2 ounce fat free feta, crumbled
1/2 small tomato, diced
1/2 avocado, diced
1 tortilla
Optional spices: salt, pepper, garlic powder, onion powder

 

Directions:
1. In a microwave safe bowl mix oil, peppers, and spinach.  Season if desired.  Heat for 30 seconds on high.
2. Add eggs into cooked veggies, whisking to break up yolks.  Cook on high for 1 minute.
3.  Stir well, as half the egg will be cooked already.  Add in feta and cook on high for 1 minute.
4.  Break up egg with fork (if necessary), and mix in tomatoes and avocado.
5.  Fill tortilla and roll tightly.  Enjoy!

 

You could always just use egg whites, and leave out the tortilla if you are concerned about the flour.   Avocado is high in fat, but it’s a good fat, so I don’t take that into account.  This was a delicious breakfast that only took a few minutes to make, and could easily be eaten on the go.
